Shitake Rousong

  1. Ingredients:
    • 200g stems of shitake mushroom (shitake’s feet)
    • A Teaspoons of salt
    • A tablespoon of monosodium glutamate (vegan)
    • A tablespoon of Vegetable oil (vegan)
  1. Practice:Step 1: Because shitake rousong is made from stems of dried shitake, you should by only stems of dried shitake. Trim and wash the stems of dried shitake clearly. Soak it on the hot water approximately 15 minutes. Using knife to reject black stems (part that touch with wood)
  • Step 2: Pick the stems of dried shitake out of water and tear into fibers. Put into a liquidizer and blend. Retain the soaking water for the following step.
  • Step 3: Heat the pan over high heat, put the stems of shitake and stir for a few minutes and then add the soaking water of stems of shitake until being shallow. And then, add vegetable oil, vegan monosodium, salt to pan and reduce heat to medium-low. Turn the mixture continually until thick. Because it is a vegetarian food, you should use salt and vegan monosodium glutamate instead of fish sauce. Do not roast too thick because it can be too tough to eat.
