– Tofu: 2 blocks
– Medium sized tomatoes: 6-7
– Carrot: ½
– Green onions, lentinula edodes, shallots
– Spices: seasoning, peppers, soup powder, cooking oil.
Step 1: Wash and finely dice green onions; shred and chop carrots, chop
lentinula edodes, peel and mince shallots
Step 2: Put green onions, carrots, lentinula edodes and shallots into a bowl of ground tofu, add 1 tablespoon of seasoning.
Step 3: Mix all ingredients together.
Step 4: Wash tomatoes, cut the navels, and save the cored tomatoes for the sauce.
Step 5: Now you’re ready to stuff the tomatoes. Stuff just to the top of the tomotoes, leaving a flat surface for even cooking.
In a large sautee pan, heat cooking oil on medium high heat. Add the stuffed tomatoes with the stuffing side down first. Also add the cored tomatoes around as well. Cook until the meat is nicely golden brown and flip once.
Step 6: In another sautee pan, heat cooking oil and minced shallots on medium high heat. Add the cored tomatoes. Add water and season with fish sauce or soup powder and pepper to taste. The cored tomatoes will soften and turn in beautiful sauce.
Lay the stuffed tomatoes on the plate, pour the cored tomato sauce onto it.
Garnish with cucumber and lettuce.
Slightly sour taste of tomatoes, sweet taste of meat mixed with mushrooms make your meal more palatable and more cozy.
